    Big Daddy 30day aged Rump from Aldi

    White wine and nutmeg creamy spring greens

    Very garlicy buttered chestnut shrooms

    Peppercorn sauce

    131f for 3hours(usually 2hr, but forgot about them) then a 20min ice bath followed by a Cast iron sear with Ghee
